Pumpkin Spice Soda ⁠

For the spiced simple syrup⁠

1/2 cup water ⁠
1/2 cup brown sugar ⁠
2 units cinnamon stick⁠
1 unit star anise ⁠
2 units cardamom pods, lightly crushed⁠
3 units all spice berries ⁠

for the mocktail ⁠

1 1/2 oz spiced simple syrup⁠
1 thumb fresh ginger, cut into coins⁠
1/2 cup pumpkin puree⁠
1/2 cup orange juice ⁠
1 oz apple cider vinegar ⁠
1/3 cup Carbon8 sparkling water ⁠

To a small saucepan add sugar, water, cinnamon stick, star anise, cardamom pods and all spice berries . Bring the mixture to a boil, cooking until sugar is dissolved. ⁠
Remove from heat, cover, and let steep for 30 minutes. Strain the syrup into an airtight container and chill until at least room temperature before using. ⁠
Place the fresh ginger and spiced simple syrup into the cocktail shaker, then muddle. ⁠
add pumpkin puree, apple cider vinegar, orange juice and ice, then shake for 10 seconds. ⁠
Fine strain into highball glas full of ice ⁠
Top with Carbon8 sparkling water and enjoy. ⁠
