Pumpkin Spice Soda
For the spiced simple syrup
1/2 cup water
1/2 cup brown sugar
2 units cinnamon stick
1 unit star anise
2 units cardamom pods, lightly crushed
3 units all spice berries
for the mocktail
1 1/2 oz spiced simple syrup
1 thumb fresh ginger, cut into coins
1/2 cup pumpkin puree
1/2 cup orange juice
1 oz apple cider vinegar
1/3 cup Carbon8 sparkling water
To a small saucepan add sugar, water, cinnamon stick, star anise, cardamom pods and all spice berries . Bring the mixture to a boil, cooking until sugar is dissolved.
Remove from heat, cover, and let steep for 30 minutes. Strain the syrup into an airtight container and chill until at least room temperature before using.
Place the fresh ginger and spiced simple syrup into the cocktail shaker, then muddle.
add pumpkin puree, apple cider vinegar, orange juice and ice, then shake for 10 seconds.
Fine strain into highball glas full of ice
Top with Carbon8 sparkling water and enjoy.
