Lychee Sparkling Mocktail
Full Recipe:
For the ginger syrup
1 cup ginger, washed and chopped
2 cups water
1 1/2 cups granulated sugar
1 lime or lemon, juiced
Lychee syrup
1 oz ginger syrup
4 (canned) lychee
8 mint leaves
1 tbsp lychee syrup (from canned lychee)
1/2 cup Carbon8 sparkling water
In a medium saucepan place ginger and water. Bring to a boil, the reduce heat and simmer for 15 minutes. Add sugar and continue to simmer for 10 minutes. Remove from the heat and strain out the ginger pulp. Combine the ginger syrup with lime (or lemon) juice). In a cocktail shaker muddle the mint with the lychee. Add ice, ginger syrup, and lychee syrup and tightly secure the top. Shake well for 15-20 seconds. Add ice to a tall glass. Pour the contents of your cocktail shaker on top. Top off with Carbon8 sparkling water, garnish with mint & lychee, and enjoy!
