Gingerbread Apple Punch ⁠

For the gingerbread syrup⁠

1/3 cup brown sugar ⁠
1/3 cup water⁠
1 tsp ground cinnamon ⁠
2 tbsp ground ginger ⁠
1/2 tsp ground allspice⁠
1/4 tsp vanilla extract ⁠
1/8 tsp ground cardamom⁠

For the mocktail ⁠
1.5 oz gingerbread syrup⁠
1/4 cup apple juice ⁠
a dash of orange bitters ⁠
1/4 cup Carbon8 sparkling water ⁠
Star anise, for garnish ⁠
Cinnamon stick, for garnish ⁠
Rosemary sprigs, for garnish ⁠
Red apple slices, for garnish⁠

In a pot combine the sugar, spices and water. Bring to a boil cooking until the sugar is dissolved. ⁠
Strain in a fine mesh strainer (or mesh bag) over a bowl. ⁠
Pour into a jar or bottle and chill until at least at room temperature before using. ⁠
In a serving glass with ice stir the syrup and apple juice. ⁠
Top with Carbon8 sparkling water and garnish with a cinnamon stick, star anise and rosemary sprigs. ⁠
