Gingerbread Apple Punch
For the gingerbread syrup
1/3 cup brown sugar
1/3 cup water
1 tsp ground cinnamon
2 tbsp ground ginger
1/2 tsp ground allspice
1/4 tsp vanilla extract
1/8 tsp ground cardamom
For the mocktail
1.5 oz gingerbread syrup
1/4 cup apple juice
a dash of orange bitters
1/4 cup Carbon8 sparkling water
Star anise, for garnish
Cinnamon stick, for garnish
Rosemary sprigs, for garnish
Red apple slices, for garnish
In a pot combine the sugar, spices and water. Bring to a boil cooking until the sugar is dissolved.
Strain in a fine mesh strainer (or mesh bag) over a bowl.
Pour into a jar or bottle and chill until at least at room temperature before using.
In a serving glass with ice stir the syrup and apple juice.
Top with Carbon8 sparkling water and garnish with a cinnamon stick, star anise and rosemary sprigs.
