Chai Orange Spritz

For the chai simple syrup⁠
1/3 cup brown sugar ⁠
1/3 cup water⁠
1 tsp ground cinnamon ⁠
1/2 tsp ground ginger ⁠
1/2 tsp ground allspice⁠
1/2 tsp ground nutmeg⁠
1/4 tsp ground clove ⁠
1/4 tsp ground cardamom⁠
1/4 tsp ground black pepper ⁠

For the mocktail ⁠
1.5 oz chai simple syrup ⁠
3 oz orange juice ⁠
1/4 cup Carbon 8 sparkling water ⁠
1 cinnamon stick, for garnish⁠
1 orange slice, for garnish ⁠


In a pot combine the sugar, spices and water. Bring to a boil cooking until the sugar is dissolved. ⁠
Strain in a fine mesh strainer (or mesh bag) over a bowl. ⁠
Pour into a jar or bottle and chill until at least at room temperature before using. ⁠
Use a peeler to cut a piece of orange peel, wipe it around the inside of a serving glass. ⁠
add ice then stir the syrup and orange juice. ⁠
Top with Carbon8 sparkling water and garnish with a cinnamon stick and orange slice. ⁠
