Blueberry Ginger Cooler
Recipe:
1 cup ginger, washed and chopped
2 cups water
1 1/2 cups granulated sugar
1 lime or lemon, juiced
For the blueberry ginger cooler
1 cup ginger syrup
2 cups blueberries
8 mint leaves
a few dashes of orange bitters
3 cups Carbon8 sparkling water
Method:
In a medium saucepan place ginger and water. Bring to a boil, the reduce heat and simmer for 15 minutes. Add sugar and continue to simmer for 10 minutes. Remove from the heat and strain out the ginger pulp. Combine the ginger syrup with lime (or lemon) juice). Make the mocktail, to a pitcher add the ginger syrup, the blueberries, orange bitters and the mint leaves. Muddle until the blueberries release their juice. Add ice and top off with Carbon 8 sparkling water.
