APPLE PIE Mocktail with Carbon8 sparkling water For the spiced simple syrup
1/2 cup water
1/2 cup brown sugar
2 units cinnamon stick
3 units star anise, lightly crushed
3 units cardamom pods, lightly crushed
5 units all spice berries, lighly crushed
For the spiced simple syrup
1 cup apple juice
a dash orange bitters
2 tsp rosemary leaves
2 oz spiced simple syrup
1/2 unit apple, chooped
2 cups Carbon 8 sparkling water
for garnish star anise
for garnish cinnamon sticks
for garnish Rosemary sprigs
as needed ice cubes
Method:
To a small saucepan add sugar, water, cinnamon stick, star anise, cardamom pods and all spice berries . Bring the mixture to a boil, cooking until sugar is dissolved.
Remove from heat, cover, and let steep for 30 minutes.
Strain the syrup into an airtight container and store in the fridge for up to 2 weeks. In a cocktail shaker, muddle together the rosemary leaves and chopped apple. Add ice, apple juice, orange bitter and spiced simple syrup. Stir until well combined. Top the mixture with Carbon8 sparkling water. Strain the apple mixture into 2 serving glasses. Garnish with a cinnamon stick and rosemary sprigs.
