Santas's Punch
For the spiced syrup
1/3cup water
1/3 cup brown sugar
2 units cinnamon stick
1 unit star anise
2 units cardamom pods, lightly crushed
3 units all spice berries
For the mocktail
a dash of orange bitters
a couple of rosemary sprigs
1.5 oz spiced syrup
3 oz cranberry juice
1/4 cup Carbon8 sparkling water
Citrus rim salt, for garnish
To a small saucepan add sugar, water, cinnamon stick, star anise, cardamom pods and all spice berries . Bring the mixture to a boil, cooking until sugar is dissolved.
Remove from heat, cover, and let steep for 30 minutes. Strain the syrup into an airtight container and chill until at least room temperature before using.
Rim a martini glass with citrus salt
Pour syrup, cranberry juice, orange bitters into a cocktail shaker.
Add rosemary sprigs and ice and shake.
Strain into the serving glass and top with Carbon8 sparkling water.
